Hello. Could you please advise me on the following matter. If I retired from a company 7 months ago, how many payslips I need to produce to the visa office? I had been working for that company for a few years. Shall I take the complete set of the payslips for each months of all my working time for that company or just some of the payslips can be enough?

You can take a offer letter And/Or Experience letter for the duration of employment along with details of annual pay/Job role and a couple of pay stubs will do IMO. Its always better to provide as much documentation as possible

You can provide the most recent pay-stubs before you left the company. You can also provide Tax Documents like W2s if you are in US along with company letter. You do not need to provide all pay-stubs for the entire period you worked in the company.
