Does anyone know how long it takes to get back the passport from New Delhi visa office after PR stamping?

The next day from stamping they update the status to "been dispatched from Canadian embassy on xxxx (date)" and within a day or two it will say "ready for collection at CVAC" (VFS).... This was in my case...

How much time it took the status to change to dispatched from the day you submitted the passports? Did you submit to VfS?

Yes we submitted with New Delhi VFS.
We sent it on October 30th, was dispatched to NDVO on October 31st. It was dispatched back to VFS on November 9th and ready to be collected the same day in the evening. But because collection is only until 4pm, we picked it up the next day on November 10th.
