I am sponsoring my common law partner from france. I have a job offer waiting for when I return to canada.

However, I am currently in between jobs here in france and am worried that by the time I finish filling out the application process and send it I will not have found a new one. (currently in the final stages waiting for the medical exam for my partner)

Will this cause problems in my assesment as a sponsor?
 
No - this shouldn't cause problems. If you can, inlcude proof that you have a job offer waiting for you when you return to Canada (e.g. letter from employer).
 
thanks a lot I was really worried about it and didn't want to put the process on hold while I search for a new job.

Does the letter from the employee have to be notarized, or is the original with his contact information sufficent?

Also I'm a bit confused where to send all my documents.
Do I send both my (sponsor) and his (principal applicant) documents to Mississauga or to the French visa office.
Do I include everything together in the same envelope or do they have to be seperate?
 
The original with the contact info will be enough.
You send the sponsor's application and the applicant's application together in the same package to Mississauga. You can separate them within the package, by putting them in separate envelopes for example, but it is not necessary.
