My ticket itself says departure is 27th of February and arrival to Canada is first of March so I have to mention my stay in India up to 27th of February right when I do that it won’t accept since 27, 28 and first of March are 3 days

Why don't you use the dates accordingly to Canada time zone? If you use multiple timezones looks like the application is not able to understand it.
 
I can put in exact entry and exit dates when it comes to Canada but for India I can make the changes right .. like it the departure is 15 I will write 16th that way system will allow me .. but the prob is the stamps in Indian and Canadian airport tells them accurately

You can always include a letter of explanation. Processing officer would surely understand the difference in timezone of the stamps and IRCC application limitation.
