On the new tracker, I have signed up using my application number and UCI, however; it's been over 30 mins and I haven't received an e-mail.

It was almost instant for me.
 
Today I received my test invite. From Vancouver....

ours was immediate. It does state it sends to the email you used when applying. Just make sure its the same email you are logging into.
 
My background check is one year now. Though it was saying DM on previous tracker. Now, it is saying in process on the last step.

Me too... It shows DM on the previous tracker. But, on the new system, the final step (Oath) shows in process.
 
Got an interview invite. I am not sure about the documents I need to provide. There is a cross in the checkbox for Photocopy of passports and there are other options with checkboxes too but they don't have any cross in them. What does it mean, do I only need to give colour scan of my Passport (s), or do I have to provide every document they mentioned there (such as: Rental Agreements, Record of Employment, record of education etc.)?

@adey786, you may recall, you suggested me to do fingerprint on my own, which I did - I am waiting for the result in my mail. Do you think I should scan the result right away after receiving and send it via email or should I wait for the interview and tell the interviewer that I already got my fingerprint done again? I am just trying to avoid the delay and if they usually don't ask for fingerprint after interview, I might as well just don't provide/talk about it all along. Sending the scan copy might put the Decision Making in another delay? Just thinking out loud here.

Hello!
You have to provide only documents that have the box checked - the passport, in your case. Just check if there is any note in the letter saying you need a translation in case something (even a stamp) is not in either English or French.
