The Middle Eastern visa offices are generally slow ones. I wouldn't expect to get her visa 3 months after you apply. Since you are a Canadian citizen, you can apply to sponsor her while you are living abroad. You would have to include proof in the application that you are planning to resettle in Canada. If you won't be moving back for two to four years, don't apply yet. I would apply about 18 months before you want to move back (depending on the visa office). If she gets the visa more quickly than you expect, she can always go to Canada, land, then come back and wait.
