If my case is approved and I get a PR, is it true that I can only work in Canada for jobs falling in that category for which PR was approved ?

After getting your PR you can work in any field in Canada. There is no such restriction.

Once you have PR, you are free to work in any NOC, provided you get jobs under those NOCs.

But no restrictions on you.
