Whether or not your NOC matches your actual job will only be determined once you submit an application in response to an ITA. You will have to supply a reference letter for each job you list under the work experience section. A visa officer will then compare the job duties listed in the reference letters to the duties listed under the NOC code.
It will be in his / her discretion to determine this. Obviously, the more overlap between your reference letter and the NOC code the better.
Whether or not you can get in trouble for a potential NOC mismatch for a job you're not claiming points for again depends on the VO's judgement. If they think you deliberately tried to deceive them, you may have a problem. If it's just an immaterial mismatch, they may accept it.
Bottom line: Ensure your NOC code and your actual job match as much as possible.
