so far the list include noc 6322 which is cooks,if your noc on the lmo is 6321 and your job title on the work permit is sous chef then you can still apply as of now assuming that you will get a reference letter confirming you have done duties of a sous chef.
if you are on open work permit and working as a cook but thinking to cheat the system by applying as a sous chef to get approved under CEC then this will raise a RED FLAG for the visa officer because the officer will compare your salary to those a sous chef suppose to make(there is a difference is a salary scale for both of the positions)also if you have not done in culinary school programs and/or no previous cooking experience this also will raise concerns to the mind of a visa officer as to how someone will directly become a sous chef without having done in school related to the trade or experience.
long story short is to be honest about your application because lying will be considered a misrepresentation and the consequences are big.
if you are for real a sous chef then i advice to send your application as soon as you qualify and i wish you a good luck :)

6322 is no longer on the list effective immediately

Sorry to say but they changed their policy its no longer exist in CEC today.
