All of my work experience is under the NOC 1121, I was wondering if I could put the Human Resources Intern position I held once, under the NOC 1121. Is it correct? I have browse on the internet about this, but nothing concrete comes up.

I suggest that you go with NOC 1415 "Personnel clerks" for the intern position -

identification clerk
labour relations clerk
personnel clerk
personnel services clerk
staffing assistant
staffing clerk
training clerk
