Hi I have multiple NOC's during my 7 years of work experience. My last work experience was for 8 months with the NOC 0601 which I would want to use for my future jobs to pursue my career. Should I use 0601 as my primary occupation or my previous one where I have 2.5 years of work experience. ?

Your primary occupation is the one that qualifies you for Express Entry. It has nothing to do with your future employment (unless there's a job offer involved).
