I believe CIC will ask for an updated docs during your application, this may include bank cert or proof of settlement funds...so I suggest, you keep your funds in case they ask for it later

There is no expiration date for notarized document(s), you can use it anytime. The purpose of notarization is just to show that the document(s) that you have is/are valid. Because you cannot notarize a certain document if you don't have the original, so simply means it's a valid copy or certified copy of yours.

If you remember once you notarize a document, a local government in-charge in notarization will always ask for their copies because they will include it in their records that will make your document more valid, same also to those private notary offices as they do the same procedures.

Just to let everyone know, our letter came by airmail, there is no surface mail option in Canada apart from parcels, all letters go airmail.

I would like to ask something, if an applicant under GS receives their LOA, is it included there or specified a request letter for additional documents? or the MPNP will send you a letter regarding additional documents in a matter of time?

LOA is given as final notice that you passed the assessment made by MPNP. If they will ask for additional documents, you are advise ahead of time.
