I'm a Canadian currently living abroad who has been approved as a sponsor for my Korean wife (both of us are now & the application is for Outside Canada).

Her application for Permanent Residency is currently being processed in Manila (began around Dec 20th) and so will take several months.

However, we recently decided to move back to Canada in May of this year. My wife obviously wouldn't be able to work until she is approved for PR.

How would this move affect our application process? Would it delay things? Would we have to re-apply from within Canada with an entirely new set of forms?
 
It won't do anything to the application. She needs to update her address with IRCC once in Canada.

Note that until approved for PR, your wife can't "move" to Canada. She is coming as a visitor to be with you while the app processes.
 
No, it won't affect a thing, as many applicants (CIC is very aware of this) wait for their outland applications to process while they stay in Canada as visitors. My wife got her visitor visa extended at the beginning of the month and then, lo and behold, got her PPR in the e-mail on January 10th.

Waiting a PR application out while a visitor in Canada is perfectly fine.
