I currently live outside of Canada and have been granted a permanent residence/confirmation of permanent residence (COPR). My understanding is that, I have to go to Canada before the expiry date and apply for a PR card. Assuming that I have relatives/friends in Canada whose address I could use to have the PR card sent to, can I just stay in Canada for, say, 3 days? What's the minimum amount of days I have to stay in Canada if I'm going there just to ensure that my PR status is not expired.

If your question is "how long do I have to stay in Canada when I first land and activate my PR" - the answer is "as long as it takes you to complete the landing process with CBSA." You could theoretically land, complete the formalities, and leave on the next flight.

If your question is more "how many days do I need to spend in Canada to keep my PR" the answer is the 2 of every 5 years.

Yes. Typically, most people spend a day or two. You should complete your landing and get a SIN number - those two things are essential. Everything else can be done later.
