I'm applying through London (as common law) as I'm Irish, although I live in Korea.

My partner and I were applying in August but setback after setback has meant that we will only get it sent next week. I did my medical check in early July and I'm starting to get worried that the process won't be done by next July. Should I get another test done now, just in case or just wait and see?

I'm worried because I will be in Ireland or Canada next July so I don't know if it would be hard to get the test done there or not.

Just submit the medical you did in July and see what happens. As you note, the results are only going to be valid for 12 months at which point you will probably have to do another one if your application is still being processed.

I've been told the second medicals are not the same as the Upfront Medicals, that the visa office will specifically request for it and will issue a medical form with the file number, if necessary. Since Hong Kong VO has not touched our application since getting SA in April, looks like we will be further delayed once they do decide to look at it, as our medicals expires this month.

That's correct. If your medical expires and the VO won't extend it, you will be contacted by CIC and asked to submit to a second one.
 
My husband is also from the U.K. and his medicals expire in dec. He had his first medical done here in Canada and if cic requests another it will also be done in Canada again as he will be here on vacation in Dec. I am going to email them a month before they expire to see if they will extend them . The reason why is one lady never received an email and when the letter came from cic to do medicals it was too late and decision was made and it was not the decision she wanted. Better to be safe than sorry.
 
I had to e-mail CIC to notify them my husband and stepson's medicals were going to expire soon and they e-mailed back a couple days later and said they will extend them. Just make sure you notify them a month or two in advance.
