Hi,
I recently got my Bachelors in Mechanical Engineering and I want to apply for Study Permit to obtain my flight training from a Canadian DLI. The thing that confuses me is that many people get rejection based on the fact that previous study history does not match future study plans. However, in case of a career in aviation there is no related education in my country* and many employers prefer that their pilots have a Bachelor's degree (irrespective of the field). Therefore I decided to go with Bachelor's of Mechanical Engineering since it will give me strong foundation of mechanics involved in aviation (which is a small part of knowledge that a pilot should have).

How do I structure my application/cover letter so that VO is satisfied?

*I am aware the in many countries "Bachelor's in Aviation" is offered as a 3/4 years program, but this course is not offered in my country.

Well, explain that there are no bachelor's programs in aviation in your country. Then you should also explain why you can't attend flight school there.
