Hi,
It is difficult for me to find a B Category job in Canada for one year.
My brother is a Canadian citizen. If he opens a firm in Canada and employees me on a full-time basis for one year. Will it be counted as a 1 year of Canadian experience. I can get all the documents, payslips, etc.

If you can't get all of the documents - then no, it will not be counted.
 
Pretty risky thing to do especially if you are the only employee. Would expect a lot of scrutiny to determine whether it is a genuine business and what kind of work has been done.

Given that he would need to obtain an LMIA to employ you and then you would need to apply for a closed work permit, it's quite likely that this is not a viable plan. Getting an LMIA is likely to be a problem.
 
Company also need to be established for a year and prove its sustainable and can support the candidate.
