I got my passport stamped with the single entry visa that is valid for one year. Let's say my visa is valid till 31 December 2018. Does this mean that I have to simply enter Canada before or on that date? Or does it mean the date until the time I get my PR card? I'm assuming its the former. i.e. Worst case, I can land in Canada on 31st December and continue to stay there (post expiry of my single entry visa) until I get my PR card.

When you say single entry visa - are you talking about your COPR or something else (like a single entry visitor visa)? If you're referring to your COPR, it's the date by which you have to enter Canada to become a PR. It has nothing to do with your length of stay.
