Hey Everyone - Quick question!

After living together for 3 years in Canada my wife received her PR card in 2017. However, we both left to stay in Denmark in 2018. We have met the day's requirement to keep the PR status (since I am a Canadian citizen), and I finally was approved to become a resident in Denmark as well in late 2021.

We are travelling back to Canada with our newborn daughter this month and just wanted to double-check the PR would still be valid as it does not expire until June 2022?

Yes, her PR is still valid. She is good to travel. She will need her PR card to board the plane.

How soon after receiving PR did you move out of Canada? Did you move because of you or your wife?

You are PR until Canadian government strips your status, or you renounce it on your own.
If neither of two happened, then you are still a PR.

I am not sure what you mean by stating "We have met the day's requirement to keep the PR status", but if you are Canadian then anyone accompanying you should be in compliance with RO. At least, this is how it was back in the years. You should double check, to make sure the law has not changed recently.

Since your wife has valid PR status (based on what you describe), she will most certainly be able to go and get admitted into Canada with a valid PR card.
RO could be questioned, if she stayed in Canada less than 730 days in the past 5 years , but, as I mentioned above, she should be compliant because you are Canadian and she was living with you. Just verify to make sure the law has not changed.
