If I bother to get letters from all of my past companies I can claim 6 years of work experience on my NOC. However, with letters from my last 2 companies only, I have 4.5 years worth of experience which would be enough to meet the 3 years requirement. Does it make any difference if I make an effort to get the remaining letters?

It matters if you need those points under the six selection factors to be eligible under the FSW program.

You can try - but based on what we've seen on this forum, it's pretty difficult to claim your spouse as non-accompanying if they are already in Canada. What would be your reason for making her non-accompanying? You'll need to provide CIC with a reason they will accept. (Getting more points is not accepted as a reason.)

my immi consultant said she can travel and stay Canada on her own status that is not a problem!

and vital point is that she is in Quebec!!

Your consultant isn't CIC. Again, CIC will expect an explanation regarding why you have listed her as non-accompanying if she is already living in Canada.

I am still in doubt though.

No, that does not make sense. Her status is not the question - she may have a valid visa and that will remain valid, they won't cancel it.

Your application, however, needs to have a really good reason for her not accompanying you, and she's already in Canada, so what exactly will you tell CIC? You want more points so you are listing her as non-accompanying, and oh by the way she's already in Canada so we will be together anyway and it doesn't matter?

That won't work.
