I signed my application on November 05, and gonna mail it tomorrow (November 26), is that OK? I didn't change my address or anything
Is it OK to have few days gap between signing date and mailing date?

Of course it is OK. Just make sure that for the day before you sign, you have 1095 days behind you in Canada.
