Super Visa is valid until November 2029. I entered Canada in February 2024 and was stamped at the airport until February 2029. I travelled to London and returned to Canada in September 2025, but the immigration officer did not place a new stamp in my passport. Until what date am I allowed to stay in Canada?

I think you overstayed for two months. You should have asked the immigration officer.
Don't think you have overstayed your first visit. However, once you left Canada, you would be making a new entry, so the 2029 stamp is no longer valid. I'd assume that since they didn't give you a new stamp, it's the standard 6 month entry, so yes, you have now overstayed your 6 months. You should probably apply for restoration if you plan to stay longer.
