I have Canada as my current country of residence and visitor as my states. For "from" I entered the date I arrived in Canada but what should I put for "to" ? As of now I have entered the date I plan to go home "2017-04-14" which is easter weekend. Is this fine?

Sounds good to me, does the form allow you to validate with that future date in that field? If so then fine.

Might be worth adding a comment somewhere that you are only in Canada as a visitor and will return to XXXXXXX on 2017-04-14 and remain there until (whatever - date or PR approval etc.).

Yes it allowed me to validate. I am going to be coming back to Canada with in a week of leaving to go home
