I'm employed with a company from the US (remote work) and seeking a study permit in Canada, so I am aware you can't be working during your study period in Canada for the first 6 months. Do I need to show that I will be quitting my work if I got my visa approval? If so how do I show it? Also when exactly should I be quitting?

Why can’t you work for the first 6 months, never heard of that? Why do you need to show that you are quitting? Nothing to do with apply for a study permit. You can work up to 20 hours off campus. If working remotely and the company doesn’t have offices or clients in Canada, you can continue to work remotely in Canada.
