While applying for PR, if I mention that I am married but applying PR only for me (I mean spouse is not coming with me to Canada). ? Can I get her a PR once I move to Canada ?

Others will correct me but what you suggest is fine BUT you must include your spouse in the application as non accompanying and meet any requirements for her in the application given if you do not include her in your PR application as non accompanying you will not be able to support her PR application later on.

Yes - provided you declare her in your application as non-accompanying.

You should be aware that in order to sponsor her later, you will need to be living in Canada while the application is being processed and it's quite possible she won't be able to come to Canada during that time. So it's possible you may be separated for quite some time before you can bring her here as a PR.
