You would be working outside of school breaks right, you are indeed violating the study permit obligations. Agreed. If they doing cash jobs, there's no way to track it but if they are employed by a business who knowingly allows international students to go over 20hrs, the business can be fined if reported and such student be removed from Canada. Think about it this way, high chance nothing will happen but if something does happen you lose much more than a few extra dollars you earned while working illegaly.
Also, if you have to produce your paystubs in future to CIC for any reasons, they will find out what you were doing unless again it was strictly cash job. Also, CRA might be interested in cash workers.
Well the sad fact is that there are illegal workers in this country who go unnoticed and hundreds of students choose to work for cash and get away with taxes without reporting this income. "IRCC is not stupid" maybe true in the context that they choose to overlook where such an employment arrangement might have existed due to the fact that they always operate with low resources and have extensive backlog of applications to deal with.
I agree with the fact that students do it and some or let's say most get away with it. Not that I agree with the fact that it's ethical or morally correct. I can guarantee CIC/CBSA can find at least one such student working at 90% of the ethnic restaurants. Just saying. Lol.
I think they are more after people that quit studies entirely and work full.time.
