There's no reason it should take more than a week or two to fill out the application proper. Gathering some of the other paperwork might take a bit longer. My wife and I had it done within 3-4 weeks TOTAL!
No need to hire an attorney for US to Canada Outland PR, unless there's criminal or previous immigration issues involved.

Make sure you spend time proofreading. Both of you should be working on it, ideally, and quite familiar with the process. That way there's two sets of eyes to see if things are entered incorrectly, or just to catch minor errors, or you have another perspective handy if you're confused by the wording of something in the guide or on the forms.
It's hard to quantify the actual amount of time we spent working. The week you booked off I'd say is more than adequate if you exclude prep time. If I had to guess I'd say we were working on it some each day over the course of a week, usually in the evenings or when we'd have a break from my daughter. Not non-stop or anything like that. But again, the vast majority of that time was on the relationship portion, and we wanted to be very thorough because we'd originally met online and were concerned about providing enough proof.

It shouldn't be. If its not on your FBI report. You will have a question in your app forms that asks if you've ever been arrested, detained, etc. You'll have to give an accurate accounting of what happened, and explain how the conviction if any was deferred.
