To apply for a visitor extension how long does it typically take from the time we send it to the time it's been approved?
Also, what's the difference between visitor extension and visitor visa?

Right now it's taking about 100 days. However, you are covered via implied status that entire time it is processing.

A visitor visa is also known as a temporary resident visa (TRV). Not everyone needs one of these to come to Canada. Are you from a visa-exempt country? Did you enter Canada on a TRV? The visa lets you get INTO Canada, whereas applying for an extension lets you stay beyond the initial six months.

My husband arrived with an eta. We will be sending his OWP and PR app together in a few days, do you think he should apply for visitor extension as well?

No, applying for the OWP should give him implied status as well until he gets it.
 
When you apply to extend your visitor status OR apply to change the conditions of your stay (from visitor to worker in this case), you have implied status until they make a decision on it (about 4 months). With implied status, you are here legally.

When you apply for spousal sponsorship for permanent residence, you are entitled to apply for the open work permit, as well. You should definitely take this opportunity to make your status here legal.

So implied status is applied only if you apply for the open work permit.

Visitor or worker are both a form of temporary resident, so you wouldn't apply for both.
