Are you common law because otherwise you can't sponsor her. Is it inland or outland? It is 3 months for anyone who comes to Ontario. If you are applying inland there is a possibility you can get OHIP a month or two early but it is a complicated process.

We are in the process of getting married so we'll apply for spousal sponsorship inland in Ontario.. SO it is generally 3 months from the time applied?? or 3 months after we've received work permit or the first letter saying she's accepted to stay in the country?
 
Not really too hard to get OHIP once you've received AIP. The key is to do it at a Service Canada, not a Service Ontario and be sure that you have the actual AIP letter stating that you've met the requirements for apply for permanent residence, blah blah blah. Having your sponsors approval letter means nothing and will not work.

Service Canada is federal. They don't have anything to do with OHIP.

I had to go to service Canada to get my OHIP started with only AIP from an Inland application. Service Ontario couldn't/wouldn't help me *shrugs*
