If/when my application for permanent residency under Family Class is approved, how long would I have to make the all important move? Would I have to move instantly, or would I have, for example, a year to move?

It depends on when you had your medical test done. Once you are approved for PR, you will be issued COPR with an expire date. Usually the expire date is one year after your last medical test was completed. So for example, if you had your medical test done on March 15, 2014, your COPR will be valid until March 14, 2015 and thus must land in Canada before or on this date.

Ok thanks. So I had my medical exam done on Tuesday just gone (20th Jan). It was an upfront medical as I haven't submitted my forms yet. I am aiming on submitting my application next week. Given the processing times, would this give my application enough time to be approved so I can land in Canada by this time next year?

If not, would I need to do another medical?

the approval paper will have an expiry date on it. you will have to land by that date or else you will have to start from scratch. as screech said, the expiry date usually coincides with the 1 year anniversary of your medical. if for some reason the medicals are close to expiring, cic will extend the validity date to help the applicant land. for example, my copr was issued in august 2014. my medicals expired in november 2014 my copr was valid until dec 2014, so cic extended my medicals a few weeks.

With London's current average sitting around 8 months, it should be more than enough time.

It really depends on the VO officer. He/she may add an extension on your current medical validity time or may ask you to do another medical test.
