I believe some of us have the same question and I don't see much information about this posted on this forum or elsewhere.
My current situation is that my work permit will expire ~3 weeks after 1 year of experience is gained at my current workplace. However, I have worked shorter than 30hr/wk full time requirement for last week and maybe for the foreseeable weeks as well. That also reflects on my paycheck. I understand you will need 1 yr of continuous full time work experience to apply for PR. But considering the special time period we are in right now, do any of you know how CEC is going to address this issue?

So far no changes to the program have been announced due to COVID-19. As of now, you still need to meet the 30hr/week full time requiremeent for a full year to qualify. This means you will have to work longer to qualify for PR under CEC if you are not working at least 30 hours per week.

Thank you very much! Can I use my paid vacation to cover the days I'm not working? I talked to HR briefly and they said they should be able to state that I had been working full time during covid days when they write me my reference letter. Are the immigration officers going to check the paycheck record when they process my application?

Paid vacation is counted as work.
