I am thinking showing them my CoPR but wondering what they are supposed to do with that?

If you don't have your card yet, some universities will accept your Record of Landing IMM1000 and/or CoPR as proof of status for initial processing, but may still require you your PR card when you get it.
You'll have to check with your admissions office directly.
