yes am going through Accra, and we have proof like lots of emails, chats log with yahoo messenger, bank details i open with my husband name which he pays money into, phone bills, greeting cards, receipts from our hotel, wedding, notary change of name, national newspaper media change of name, my husband visa page, return ticket, boarding pass, receipt of banks transfer i sent to my husband to contribute for paying bills, weddings photos, photos at the beach, cinema, at the hotel, at our religious organization work we participated, photos with my family, friends, and our Christians brothers and sister at our religion. print out in box massage discussion from my husband family and friends, and congratulation messages on our wedding form my husband, family, friends and my own friends on facebook

I think that is very good evidence. Make sure you have enough proof of your communication. We printed out 2 emails per week of our relationship (showing both the email and the reply) and then took screen caps of our inboxes to show 800+ emails to each other. What about text messages? You can use the software that came with your phone to download all the messages onto your computer and print them out.

Have you had any communication with his family in Canada? Emails and facebook between you and them would be good evidence as well. What about gifts you have exchanged? Take a picture of the gift, and include the receipt.

Send lots of photos, and hopefully you have some candid pictures where you aren't both posing.

Make things as neat and organized as possible. Have a friend look through your application to see if it is clear and well laid out. I highlighted our phone calls, for example, so the IO won't have to search through my entire phone bill to find the calls I made to my husband.

I separated our evidence into a few categories while compiling it, which made it easier to put the application together:

Visits (photos, proof of travel like boarding passes and passport stamps and visas)
Communication between visits (phone, skype, text, postcards and letters, emails)
Communication with family members on both sides (emails and facebook inbox and screencaps)
Engagement Party (pictures and receipts)
Wedding (pictures and receipts)
Honeymoon (pictures and receipts)
Gifts (pictures and receipts)

I also got letters from friends and family (including my ex-husband and my children) saying what they think of our relationship, and what contact (if any) they have had with my husband.

As you can see, I am only in the beginning stages of our process, so I am by no means experienced with this, nor do I know for sure if Accra will be happy with what I've sent, but I hope this gives you an idea.

The list of proof you have sounds very good. Bobshynoswife has the most complete and extensive 'proof of a genuine relationship' I have ever seen, so I suggest looking at her other posts for more details and ideas.
One thing I would add, if possible: you said you and your husband participated in your church activities, so a letter from your religious leader saying how long he's known you, when he met your husband, and what he thinks of your relationship would be good.
