I want to defer to summer 2021, because now that I have started working only a few more months can get me in range for PR points. I definitely definitely want to study in my phd as well so I dont want to do anything that could jeapordize that,
Assuming my professor is ok, is it sensible to defer regarding study permit point of view?
 
Unfortunately Canada is on the verge of second wave and the way pandemic is going on around the globe, there's a chance that you might have to defer to Summer 2021 any way (May be Fall 2021). I don't think they are going to process stage 2 part of application anytime soon. This AIP fiasco may come back to haunt students for Winter/Summer 2021.

Alright. If I do defer just sending LOA should be enough? I am okay with studying online as long as I am able to do it, cant control a disease. Just want to make sure no legal issues

If its starts with in 150 days of previous start date, you will not have to send it, but if its more than that, you can send webform inquiry to update IRCC. And no, There are no legal issues as long as you have informed IRCC when your information changed.

Should I raise a webform for Abu Dhabi embassy ? I believe there is some confusion in that regard because on the page it says if you are effeced by Covid select applying from within canada

Just use the general webform inquiry without selecting the embassy. They'll automatically forward request to the VO dealing with your application.

When are you planning to apply? I'd suggest to let one application finalize before jumping in to the other one.

My work experience will cross 3 years mark in January 2021, so I was planning to apply in February 2021. I can wait a few more months but my problem was I am 28,, and I dont wish to cross the 30 mark before applying for PR

There's still time before you turn 30. So you can wait. I'd suggest to let study permit finalize before you apply for PR.
