Well, Gujju community is there in almost all major cities of Canada! However, Toronto is a major hub + biggest city in Canada and it also hosts highest Gujarati people within the country. But I live in Vancouver since I landed here 3 years ago and it is nice too. There are nice hindu temples (mandir) in Vancouver, Burnaby, Richmond and Surrey. All our day-to-day groceries are also easily available and the city has an excellent transit system too.
Cannot comment on job factor coz I do not know what your profession is. Each city has something to offer. It depends on what you like to do and what you get. If you get what you are looking for, then its a great place; otherwise you will not feel happy regardless of how good the city is!!! Some places will have more opportunities but more competition as well - example Toronto. GTA has way more job openings than any other city in Canada, but at the same time there are tons of applicants giving employers a chance to find expertise in niche area that they are looking for. As per my knowledge, province of Alberta has maximum jobs due to oil boom and lowest unemployment rate (I think it is approx 4%).
City wise, all I can say is that Vancouver has been a superb place for me and my family so far. I have been to Calgary, Edmonton and Toronto - all of them are good with different weather conditions, slightly different culture and job market. Within Canada you will find cultures mostly in vertical ovals with our US counterparts. So if you are in Pacific, you will find a similar culture as Washington, Oregon and California; if you are in Alberta, you will find similar culture to Montana, Arizona and Texas (to a degree); and if you are on east coast then something similar to NY, DC, PA, etc.
Bottom line: Do not jump to any conclusion for making a decision as to which city would you move! Instead do your homework first. To me, the most important factors for deciding on a city were weather and current job conditions - so I decided Vancouver. Similarly, weigh your options as to what is important for you and your family and then make a decision.
