Grey zone - ambulance internship

Hello,
I need an information in reference to my specific situation.
I will apply for my sponsorship next year from outside Canada, I would like to know if, while I wait for it to be processed I can:
A travel and stay Canada (my passport allows visa exempt 6 months stay)
B sit observational hours as a student on an ambulance

The conditions at point B respect the following
To work in Canada as a health care student
You do not need a work permit if you meet the following conditions:

• you’re doing clinical clerkships;
• the main goal of your work is training;
• you have written approval from the board that regulates your job (note that certain provinces do not need written approval); and
• your training will last less than four months.
  
  So it appears to me that to sit those hours I don t need any kind of Visa other than a legal entry, what I need to know is if doing that while i wait for the sponsorship can impair the process.

I doubt that any emergency services will alloy an informal clerkship for liability and privacy reasons.

I think you're missing all of the eligibility requirements for this. Since you're not an actual registered student, I don't think you qualify. Plus you would need to already have a medical exam done in advance, to do anything associated with healthcare services in Canada: http://www.cic.gc.ca/english/resources/tools/temp/work/permit/health.asp

Where necessary, these students must provide a form of written approval from the body in Canada that regulates that field in order to ensure that Canadian and permanent resident health care students are placed for clinical practice first.

Foreign nationals entering under paragraph R186(p) must still be registered students, and it is expected that they will be returning to their home country to complete their studies after the training period. Therefore, it is expected that the work permit exemption training period will last about one term (that is, about four months).

Documentation requirements
The onus is on foreign nationals to provide evidence to the border services officer upon entry to Canada that they meet the requirements to perform the work being sought. Documentary evidence includes the following:

• proof from the health care student’s home educational institution stating that the student is completing a clinical clerkship or short-term practicum that forms part of their educational program (the letter should include the expected duration of clerkship or practicum)
• a letter of no objection from the body that regulates the particular health care field (note:specific provincial or territorial colleges of physicians and surgeons requirements for medical students are described below)
• a letter or email from the Canadian medical institution confirming the student’s acceptance for the period of training
