You are very okay with all the letters you submitted, as long as there are evidences of your remuneration in there. I do not know what a payslip or pay stub looks like from my own organization, but look at my profile if you catch my drift. Cheers. ;D

No issues...
One of the instructions given in your PER email to contact your local visa office is change of Job status.
Once you resign and resume in another job...you will need to contact local visa office by CSE and/or email.
You will need to present your resignation letter,acceptance of resignation from your previous company,employment letter in your new company and possibly payslips in your new company and old company.
You will need to notify and present the aforementioned documents for the local visa office records.
