I cannot figure out when I will be able to return to Canada if I leave the country in December 2020 =(

My visits to Canada were the following:
From 02-Feb-2019 till 16-Feb-2019 (15 days)
From 19-Apr-2019 till 12-May-2019 (24 days)
From 13-Aug-2019 till 20-Oct-2019 (69 days)
From 14-Dec-2019 till 12-Jan-2020 (40 days)
From 9-May-2020 till the day of writing (staying in Canada now while waiting for IRCC Office in Warsaw to complete my application for PR outland)

Can you help me with calculations please?

I'm not sure I understand what calculation you are asking about.

If you are asking about the 180 days within 365 rule, there is no such rule, it's a myth.

The 180 days is a guideline only. If you have an inland spousal sponsorship application in progress then you should return to Canada as soon as possible and keep your trip outside of Canada short since the inland sponsorship process requires you to be living in Canada.

I can stay till November as far as I see
I will apply for an extension in order to stay till December
And then my husband (Canadian citizen) and I want to leave Canada for a month or so and come back to Canada in January or February together.
My question is when I can come back to Canada?In February (according to my first entry on the visa) or in May (according to my last trip)?

You can try to come back whenever you want to.

Your extension application basically becomes worthless when you leave Canada so I would notify CIC once you leave Canada so they stop pricessing it. Hopefully you then avoid a medical request that way as well. You do still need to apply for the extension if are remaining in Canada for over 6 months.

Yes I will notify them
Official website says that extension of stay does not guarantee that you will be allowed to re-enter Canada if you leave it
My worry is when I can enter Canada as a tourist again - in February (because my very first visit was in February 2019) or in May (because I entered Canada in May 2020 and staying here now)?

Nobody can guarantee this but you likely won’t have a problem.
