Applying for the insurance would be great, but still a lot of hassle and not ethically correct in my opinion.
On the other hand if I found a job right now, an LMO + WP would take three months, and I really don't think any employer would go through this unless you are very very very talented (and can prove it).
Therefore after this very useful conversation I think I might be more inclined toward going home, for 5-6 months and then see what happens with the PR...

It isn't a "crime" to apply for EI, but you have to convince them that you are available and looking for work, and in this case, that you will be able to get the conditions of your work permit changed.

If it were a question of ethics and fairness, then it should not come as any surprise that certain privileges in Canada are not enjoyed by temporary residents, and those on closed permits presumably accepted the risk that they would remain here at the pleasure of a particular employer.

Besides my employer told me that, given the fact that I quit, I am not eligible for EI...is it true?

There's a whole chapter on the principles for 'voluntarily leaving employment':

http://www.servicecanada.gc.ca/eng/ei/digest/chp6.shtml

So I guess... yes and no?

In my case, I left (and I had to quit), because they could not find/didn't want to find a way to change my work permit and allow me to work from BC. The client I was working for was more than happy (but he is from the US) to let me work remotely, but with my work permit I couldn't.
Why did I move? Well, it's life, you make a choice, and I am really enjoying BC more than QC...no doubt about that...

So now I am in the most expensive city in the world, alone, with no job...ok first world problem ;) But I need advice.
I intend to apply for CEC this week from here and then, because of the expensive Vancouver life, maybe go back to my country in order to wait and be able to work there while waiting.

First question: can I do this?

Yes, no disadvantage. Just remember you need to do it sooner rather than later.

Second question: my partner and I have been together since June, but known each other since 2011. We've been together for not too long, but shared plans and actually tried to live together here (I have both signatures on the lease, and mobile contracts too). Would it be a good idea to include her in my application? And...are they treated as one or separate? Meaning...if they refuse her they refuse me as well?
If the second is true, I might apply without her and then sponsor her once we have more time supporting "our" case.

You don't currently meet the definition of common-law partners. If you apply as a single and then later complete the 12 months' of living together, you would advise CIC of your change in marital status and then add her to your application.

And yes - if for some reason she is inadmissible, that could result in a refusal for you.

Honestly, the easiest thing would be for you to go "home", get married, and then apply. If that's not an option, then see the steps above.

Wo wo wo wo...marriage?!!?!?

Ok...I am joking...thanks this is a good summary of what has been told me so far.
After this discussion I still think that the best option for me is to go back to my country and wait...and work there for the time necessary to get the permanent residence approved.

Ok, so, if I intend to move, which Immigration Office do I need to specify in the IMM008 ENU 2D ?
Let's say I leave in a month, do I need to specify the Immigration Office in my own country?

Thanks again...and sorry for the numerous questions :)

A follow up question: today (almost 10 months after my application) I received a call from +1 646-205-0801. As I wrote at the time, I then moved to my natal country and I was spending happily my Sunday when the above number called and then hang up. It was a registered voice who asked me to press one to register. I tried to call back but nobody answered...I am a little bit worried that I missed my only chance...
