Just wondering, when we get to the customs office, do we have to show our money and return flights? Every single time? What kinds of questions do they as at the border?

Assuming you have a regular visitor visa, you need a return flight. It's quite possible you may be refused boarding by the airline at your point of origin without a return flight. Yes - it's possible you may be asked to show you have funds each time. It's really up to the CBSA officer you speak to each time.

Hi, may I jump in here..?

Is it a problem if you have a return flight with another airline than you're flying with to Canada? We have one way ticket to Vancouver and one way ticket to London from Toronto.

I am wondering the same. I have a flight there through West Jet and a flight back using Air Canada
 
I've just asked this question from Airtransat, that's the airline to Vancouver and they replied that this isn't a problem so as long as you can provide a return ticket home it'll be alright :)
