Do I need to include this in my application?

In the Immigration Checklist for United Kingdom, the final check box, entitled "14. OTHER DOCUMENTATION", states that if I am submitting my application to the Canadian visa office in Paris, I must fill in IMM 5562 "Your Travels".

I am NOT submitting it to the office in Paris, therefore, I assume I don't need to fill in the "Your Travels" form at all? Should I just write "NOT APPLICABLE" on the checklist to make it really clear?

Yes, putting N/A on the checklist is sufficient if it isn't applicable to you.
