My PR has just been approved and I have the CoPR form with my picture on it.

My question is, do I have to 'land' the next time I visit Canada? I don't have anything prepared for it yet.

Prior to knowing the approval, I already have 2 trips to Canada planned. The first is for Christmas (about 10 days from now), then I will leave Canada and come back again at the end of Jan (6 weeks from now). I will be in Canada for 1.5 weeks for each of those trips. This really does not leave me much time to prepare.

I would rather wait until next May to land as I have already planned to come to Canada in May and will be staying much longer then. This will also give me a lot more time to plan and prepare what is needed.
 
No - you don't. You can land in May. Just make sure you land before your PR visa expires (it cannot be extended).

Just to add, you obviously need to have either a valid multiple entry TRV or an eTA or be an American coming through a land border.
