My wife and I moved to Canada last year (2019) while my child was born this year (2020). While filling up the tax return for 2019, am I supposed to consider my family status as of 2019 (self, spouse) or as of current date (self, spouse, child)? This will decide whether I'm supposed to fill in the dependents section, and other relevant credits. I feel it is the former, but just want to confirm with the forum.

It is the family status in the actual tax year. You don't get credits for a child that wasn't born yet.

No. Tax filing dates have been extended to June 1 for personal income tax. However you must still file and pay if you owe. There are no exemptions.
