I am currently on maternity leave until Feb 2021. The checklist is asking for employment income, with recent notice of assessment and letter from current employer starting period of employment, salary and regular hours. Since I'm not working right now but do have a job. Do I just provide the assessment from 2019? Or do I have to write a letter explaining that I'm currently on mat leave AND provide assessment from last year

You should proof of your previous job, that you are currently on maternity leave (for x number of months) and what your income is and when you are scheduled to return back to your job. Would include you most recent NOC although you can include NOC2018 in addition to 2019 if you want. You only need to prove that you have the funds to care for your family without government help for spousal sponsorship.
