Okay so I have worked one year at a job full time. Although my employment letter says I was hired full time, there were times I didn’t do up to 30 hours per week due to unavailability of shifts (it’s a shift job). This happened on and off for about 3-5 weeks. Can I still claim I worked full time based on my employment letter ?

You should play it safe and work for a few more weeks to make up the missing hours. Technically you you do not have a year of work experience.
