In the ARRIVECAN, I was asked if I have to declare cash or "monetary instruments", like stock when entering Canada.

I do not carry that much of cash. However, I own > CAD 10,000 stock in my bank account and broker account (these are all in Europe). Do I have to declare these?

No, you are not carrying the actual stock certificate when you enter Canada.
