My concern is that I worked as Teaching Assistant during my PhD for three years for spring and fall semesters and I don’t know if this counts for one-year continuous work experience. Though I was paid for the whole year. I did not do any teaching during breaks.

They know that teachers do not teach during summer (even full time professors), but part of your duties as TA is research. And you never stopped doing research during summer, thus, it is continuous employment. In your experience letter match the duties with 4011, and it will work. Read NOC 4011 main duties, I bet you will cover more than 80% of them as TA (its so in US PhD at least).

TA is NOC 4012, which is clearly different from professors and lecturers. Your application will be outright rejected if you claim a NOC code that doesn't match with what you do

CIC website clearly mentions that the job description must match, NOT the title. Also, just make sure you have your Masters degree before you started teaching, since that is the minimum degree requirement for 4011 with CIC.
