Hello :)
I am sure I will be one here lots over the next few months!
I am attempting to sponsor my UK boyfriend in the Common Law Visa, what can I provide to prove my income / that I have income? I would love to say that I saved all my pay slips over the past 12 months but I haven't. I only file income tax here in the UK as well.

Any suggestions?

You should receive a P60 every year (usually in April start of the new tax year) which would detail your income for the previous year or the period you had been employed during that year. In addition if you received your pay direct into your bank account you could include copies of your bank statements. Although my wife has resided in the UK for the last 7 years we still requested the Option C printout for her last tax year....probably not needed but just in case.

There isnt any financial requirement to sponsor but CIC want to ensure that you can support your partner when you eventually move. If you have family that will support you in Canada when you move its always useful to get a letter from them, this also shows 'intent' to move back to Canada which is important factor for those sponsoring from outside Canada. Hopefully this helps a bit!

Read the Checklist http://www.cic.gc.ca/english/pdf/kits/forms/IMM5491E.pdf very carefully, especially items 17-19. There are a number of "if" conditional statements.
