My ex partner and I have cohabitated for more than 3 years. However, she applied for PR through the skilled work experience stream. She had me sign an IMM 5406 and had it notarized last year. She has since then gotten her PR but we are no longer together nor living together.

Am I still bound to her through Common Law? Does she still need to update the IRCC about our relationship even tho the break-up happened after she got her PR? Say if I got into a new relationship and want to sponsor the new GF through Common-Law/Marriage stream? Do we even need to do anything at all?

Since you didn't sponsor her, there's no impact. No need to update IRCC (others eg CRA - separate matter), just make sure that in future apps the info provided prior and with new apps makes sense.
