I'm worried about the date I stated my common law relationship started.. I started living with my partner Feb 29th, 2015 and we became common law feb 29th 2016, but the problem here is that she traveled back to her country on February 29th 2016... I have submitted my application and sponsorship has been approved..
I want to believe that if CIC is not convinced about the cohabition date, they would has emailed us before approving the sponsorship.. Right now, my file is been forwarded to PA's VO..

Should I still worry about the cohabition date or not?

The sponsor approval phase is really about the sponsor in isolation. They really haven't looked at your relationship yet. So the cohabitation is something they will examine in the next part of the application review at the local visa office (i.e. it hasn't happened yet). Having said that, as long as you can prove you lived together for a full year - you'll be fine.

I can prove that we lived together for a year but my fear is that cohabition started feb29,2015 and ended feb29, 2016 but she traveled out of Canada to her country that same feb29,2016... Will that still count as on year
